Apple Pancakes

Pretty yet easy pancakes for a special breakfast. The cinnamony apples make them taste as wonderful as hot apple pie! I always throw in some fresh blueberries before baking!

Preheat oven to 400 degrees.

Divide butter evenly between two 9" pie plates and put them in oven to melt butter.
Rotate pie plates until butter coats bottom and sides.
Toss sliced apples with 2 tbsp. of cinnamon sugar.
Arrange 1/2 of apple slices in each pan to cover bottom in single layer.

To make dividing ingredients between two plates easier, use 4-cup measuring cup as mixing bowl.

Beat eggs, pure vanilla extract, flour, milk and salt on medium speed for 1 minute.
Pour 1/2 egg mixture over apple slices in each pan.
Sprinkle remaining cinnamon sugar over batter in each pan.
Bake until puffed and golden brown, 20-25 minutes.
Serve right away, while still puffy, with warm syrup.

If you wish to make just one pancake, use:
2 eggs, 1/8 vanilla, 1/4 salt, 3 oz. milk, 3 oz. flour, one apple, and 1 1/2 tsp. cinnamon.
